There are two main types of chickpeas - Desi and Kabuli. The Desi variety has a very low glycemic index and are used to make Chana Dhal.

Chickpeas are added to salads, stews and curries as well as making chickpea flour. They are used to make hummus and falafels, two popular dishes.

They are a major source of protein in India and are a good source of zinc and folate too. They are low in fat and high in carbohydrates.

NOTE: Before use, all beans should be soaked in cold water overnight or for at least ten hours. Make sure you cover the beans with a large volume of water because they will swell up considerably. When ready to cook, discard the soaking water and briefly rinse the beans under running water.
