Apricot Yoghurt Cookies

Recipe_name : Apricot Yogurt Cookies
Description : These soft cookies are quick and easy to make.
Makes about 16
Ingredients : 175g Organic Plain Flour
1tsp Allergy Free Baking Powder
1tps Organic Ground Cinnamon
75g Organic Rolled Oats
75g Organic Rapadura Sugar
115g Organic Dried Apricots
1tbsp Flaked Organic Hazelnuts or Almonds
150g Organic Natural Yogurt
45ml Organic Sunflower Oil
Organic Demerara Sugar, to sprinkle
Recipe_details : Preheat the oven to 190. Line a tray with baking paper.
Sift together the flour, baking powder and cinnamon. Stir in the oats, sugar, apricots and nuts.
Beat together the yogurt and oil, then stir evenly into the mixture to make a firm dough. If necessary, add a little more yogurt.
Use your hands to roll the mixture into about 16 small balls, place on the baking tray and flatten with a fork.
Sprinkle with demerara sugar.
Bake for 15-20 minutes, or until firm and golden brown. Leave to cool on a wire rack.

Cook's Tip
These cookies do not keep well, so it is best to eat them within 2 days, or to freeze them. Pack them into zip lock bags and freeze for up to 4 months.
