Beluga Lentils

Black beluga lentils most likely originated in the East and
date back to Neolithic times, being one of the first ever domesticated crops.
The earthy black beluga lentil is great in soups and stews
requiring a shorter cooking time than most other pulses and beans. They have a rich earthy flavour,
soft texture and are quick and easy to cook. Their deep colour provides a striking contrast to
coloured vegetables.
From a nutrition perspective, they are high in complex
carbohydrates, protein (complete protein when combined with a grain like rice) and fibre. The earthy
black beluga lentil is higher in amino acids (amino acids make up complete protein) than french,
green, or red lentils.
Black beluga lentils (as are most lentils) are low in fat
and are high in fibre for good digestive function and also to assist in lowering cholesterol
re-absorption. It's helpful to remember that sprouted lentils contain extra nutrients and are
easier to digest due to their enzyme content.
According to Traditional Chinese Medicine, lentils have a
neutral thermal nature and are beneficial to the heart, circulation, stimulate adrenal function and
increases vitality of the kidneys.
NOTE: If lentils have been imported they will not
sprout as they have been steamed due to quarantine purposes, however if they are Australian then you
can get sprouting!
