Rice Culture Miso is unpasteurized, which means the miso will keep fermenting in the container and
the colour will turn darker as it keeps maturing. This browning process is known as Maillard
reaction in which dark pigment called melanoidin is produced, which not only adds rich flavour to
the miso but is also a powerful antioxidant.
