Organic arrowroot powder comes from the liquid strained from the turerous arrowroot plant; the liquid is starch which once dried becomes a fine white powder.  Its similar to cornstarch in that they are both used as thickening agents in cooking.  Arrowroot powder is great for thickening soups, stews and sauces and is one of the easiest starches to digest.
