  Khorasan is an ancient form of wheat so it still contains gluten but not as much as wheat (not as allergenic as wheat) and some people who have a mild wheat/gluten sensitivity are able to digest this grain without problems (only some people, definately not a guarantee, if you have a gluten intolerance only consume in small portions to begin with).
