Organic Sweet Paprika

Paprika is a spice produced by grinding the fruits of chilli peppers. Beacause these fruits are low
in capsaicin (the heat elemnt of chillis) and high in capsanthin (the red pigment aspect) paprika
has a vibrant colour but is not spicy.
The origin of paprika dates back 7000 years when it was consumed by the Mexican Indians, however,
it was actually a form of chilli being consumed, it is only when Columbus discovered the new world
in 1492 that the circumstances were created for the Spanish and Hungarians to create what we now
call paprika. The Spanish used paprika in their cuisine for years and while they continued to evolve
their unique hybrids, Hungary was breeding milder sweeter strains in their cooler climate since the
17th century. Interestingly, Paprika was illegal to grow when Hungary was occupied by the Turkish,
but many who had tasted it's warmth and vibrant colour could not resist growing it illegally.
Paprika is used as a seasoning in many dishes, in stews and soups, meats and tagines. Paprika adds
colour and warmth to a dish with a capsicum like flavour that does not dominate.
