Sesame oil is used as a flavour enhancer and a cooking oil, especially common in Asian cuisine.

Sesame oil is the cooking oil that is least prone to turning rancid when kept in the open, due to the natural antioxidants present in the oil. It is a good source of Vitamin E and Vitamin K and can serve to lower elevated blood pressure.

Sesame oil should not be used for frying as the essential fatty acids become unstable at high temperatures.
