Fine Oats Porridge Recipe
Porridge is the ultimate start to the day, particularly as the cooler weather kicks in. This recipe is rather different to your average oats porridge and a whole lot more delicious and more satisfying! From an Ayurvedic perspective, roasting the oats in a little ghee before adding your other ingredients makes them much lighter and easier to digest.
From a western perspective, it significantly lowers the GI of the oats, slowing down the release of sugars into the bloodstream. But perhaps most importantly, it makes this porridge absolutely freaking delicious!!
INGREDIENTS:
∼ ½ cup ground organic rolled oats
∼ 1 cup boiling water
∼ 1/c cup unhomogenised organic/biodynamic milk or any milk of your preference
∼ 3-4 tsp organic raw sugar or rapadura or coconut sugar
∼ 2 tbsp organic sultanas/raisins
∼ 1 tsp ground organic cinnamon
METHOD:
Grind the rolled oats in a spice/coffee grinder into a fine powder.
Choose a heavy based pan and dry roast the ground oats, stirring over medium heat for 1-2 mins.
Add the ghee to the pan so that the oats and ghee combined look like a smooth paste (if crumbly and in big blobs, you will need a little more ghee).
Stir slowly over low-medium heat for 2-3 mins then add the boiling water carefully (as it will spit). Stir quickly to avoid lumps forming. If you get lumps, you can switch your wooden spoon for a whisk and whisk the mixture instead.
Add the milk, sultanas, cinnamon and sugar. Bring to the boil then lower the heat slightly and keep stirring for 3-5 mins while it cooks. Serve into bowls and eat warm.
NOTE: From an Ayurvedic perspective it is advised to not add fresh or stewed fruit on top of your porridges. Fresh and stewed fruit should be eaten separately from other foods. For more information, see www.muditainstitute.com/Articles.html.
