Minted Pea Quinoa Salad with Toasted Almonds

Minted Pea Quinoa Salad with Toasted Almonds

This yummy salad is packed with goodness! Fresh peas, fresh mint, roasted almonds and quinoa are the essentials to this salad and has a minty dressing. Quinoa is a seed rather than a grain and is loaded with nutrients, is high in magnesium and iron and is high in protein.

Ingredients

1 c snow peas optional
1 c sugar snap peas optional
2 c frozen peas or fresh garden peas
1½ c non-cooked quinoa 
2 tsp powdered vegetable stock
1 c almonds
1-2 c fresh mint leaves
1 tsp celtic salt
 
Method
1. dry roast almonds at 180º C for 10 minutes until golden. Allow to cool  then chop into slivers
2. rinse quinoa well to remove its natural saponins (gives a bitter taste if not rinsed)
3. add rinsed quinoa to saucepan and add 2 cups water, celtic salt and vege stock. Bring to the boil and turn down to simmer until all liquid has been absorbed and quinoa is light and fluffy.
4. remove from the stove, add garden or frozen peas without stirring through and leave the lid on for 5 - 10 minute to allow the peas to steam in the cooked quinoa. Allow to cool before tossing salad
5. top and tail other peas and slice diagonally into small slivers
6. roughly chop or tear mint leaves
7. mix all ingredients together, reserving some almond and mint, and spoon the Maple & Mint Dressing over the salad and lightly toss through
8. sprinkle with remaining almonds and extra mint to garnish
 
Maple & Mint Dressing
¼ c apple cider vinegar
½ c macadamia oil
¼ c water
2-3 tbsp maple syrup
1 small clove of crushed garlic
1 ½ tsp celtic salt
1 cup fresh mint leaves loosely packed
 
Finely chop mint and add all ingredients to a screw lid jar and shake until well combined. Adjust seasonings as necessary.
