A wonderful exotic pesto made with pumpkin and pine nuts.
A wonderful exotic pesto made with pumpkin and pine nuts ideal for any pasta.
Ingredients:
- ½ cup almonds,
- bunch of basil,
- 5 cloves garlic,
- half teaspoon macro fine sea salt,
- olive oil, pine nuts,
- ¼ pumpkin,
- Italian mixed herbs,
- 500gm of any pasta.
1. Chop pumpkin into small cubes, sprinkle with Italian mixed herbs and olive oil, put onto a baking tray and roast in the oven until cooked.
2. Make the pesto: In a food processor, grind up almonds, garlic and salt, add basil and continue processing. Put into a bowl and add olive oil. (Do not blend the olive oil)
3. Cook pasta until al dente
4. Combine pumpkin, pesto, pasta and sprinkle with pine nuts. Enjoy!! Delicious !!
